Ingredients

  • 1 1/2 lbs flank steaks
  • lime wedge

Marinade

  • 1/3 cup fresh lime juice
  • 1/3 cup vegetable oil
  • 2 tablespoons molasses
  • 2 tablespoons prepared mustard
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon lime zest
  • caribbean jerk seasoning

Ingredients:

  • 2 cups rice
  • 1 1/4 cups chicken broth
  • 1 cup coconut milk
  • 1 cup crushed pineapple
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1/4 cup green onion, chopped
  • chopped macadamia nuts, to taste (or almonds)
  • toasted coconut flakes, to taste

  • olive oil

  • 1 green bell pepper, halved and seeded

  • 1 red bell pepper, halved and seeded

  • 1 yellow bell pepper, halved and seeded

  • 1 pint cherry tomatoes, halved

  • 1/2 cup chopped fresh basil

  • 8 cloves garlic, thinly sliced

  • 1 teaspoon salt

  • 1/2 teaspoon freshly ground black pepper

  • 1 tablespoon herb vinegar, or to taste

Mrs Roberts Cookbook

  

  Mrs. Roberts has the title of housekeeper at Touchstone Acres Farm. Liz Stone and the rest of the family there know she's much more than that.  She is the mother figure who takes care of them all.  She lives in the little stone cottage with her son Clinton. Sophie Tenassis rents the matching cottage next door. Emma Stone, aka Granny, lives in her own little stone house at the end of the driveway. Most mornings they all gather in the big kitchen located in the main house for breakfast.

     Mrs. Roberts gets up early every morning and walks past the duck pond and up to the main house to start breakfast. Liz and her daughter Rosie are awakened each morning to the smell of fresh coffee and scrumptious pastries. Her cinnamon rolls are to die for.

Caribbean Flank Steak

Directions

Score steak at 1 inch intervals.

Make marinade by combining lime juice, oil molasses, mustard, garlic, and lime peel in a large glass bowl.

Sprinkle seasoning salt on steak.

Place in bowl and marinate in refrigerator for 2 hours.

Turn occasionally.

Preheat broiler.

Broil 5-6 minutes each side for medium rare steak.

After broiling cover with aluminum foil and let set for five minutes before carving.

Serve with lime wedges.

Coconut Rice

Directions:

Rinse rice and add to a pot with the broth and coconut milk (and juice if you want) and cook until done. I use a rice cooker.

 

Fluff up the rice and add the pineapple, soy sauce, sesame oil and sugar. Mix well, taste and adjust seasoning.

 

Top rice with green onions, nuts and coconut flakes before serving.

Roasted Peppers with Tomatoes and Gralic

Directions

Preheat the oven to 400 degrees F Grease a 9x13 inch baking dish with olive oil.

Place the bell pepper halves open side up in the prepared baking dish. In a medium bowl, toss together the cherry tomatoes, basil and garlic. Fill each pepper half with a handful of this mixture. Season with salt and pepper. Cover the dish with aluminum foil.

Bake for 15 minutes in the preheated oven, then remove the aluminum foil, and continue baking for an additional 15 minutes. Remove from the oven, and sprinkle with Italian dressing. Serve hot or cold.

 

Cooking hint: to halve cherry tomatoes easily, place in a plastic container lid, put another lid over them. Gently press the lids to hold and run the knife through the middle. This works great for grapes too
