Ingredients

  • 1 egg
  • Splash of milk
  • 1/4 cup oif flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/2 cup Italian bread crumbs
  • 1/4 cup Grated Parmaesan cheese
  • 4 boneless skinless chicken breasts
  • Olive Oil, for frying
  • Plastic wrap
  • Marinara Sauce (recipie below)
  • Grated mozzarella cheese

 

Ingredients

 

1 28 oz. can plum tomatoes

1 29 oz. can Hunts Tomatoe Sauce

1 clove garlic, minced finely or grated

1/2 small onion, diced

1/2 tsp Italian seasoning

 

Directions

 

Put tomatoes in a large Microwave safe bowl, and crush them with a potato masher.

Stir in tomato sauce, garlic, onion, and Italian seasoning

Microwave on high 5 minutes.

Stir and microwave on high 5 more minutes.

Ingredients

1 pound ground beef

1 small onion minced

1/2 cup Italian bread crumbs

1/4 cup Parmesan cheese, grated

 

Directions

Place all ingredients into a bowl and knead well.

Form into 1 1/2 imch meatballs

Drop meatballs into uncooked Marinara sauce. (recipe above) Make sure all meatballs are covered with sauce.

Cook in microwave on high for 10 minutes.

Gently stir and cook on high another 10 minutes.

 

Serve with spaghetti, or your favorite cooked pasta.

   

Mrs Roberts Cookbook

  

  Mrs. Roberts has the title of housekeeper at Touchstone Acres Farm. Liz Stone and the rest of the family there know she's much more than that.  She is the mother figure who takes care of them all.  She lives in the little stone cottage with her son Clinton. Sophie Tenassis rents the matching cottage next door. Emma Stone, aka Granny, lives in her own little stone house at the end of the driveway. Most mornings they all gather in the big kitchen located in the main house for breakfast.

     Mrs. Roberts gets up early every morning and walks past the duck pond and up to the main house to start breakfast. Liz and her daughter Rosie are awakened each morning to the smell of fresh coffee and scrumptious pastries. Her cinnamon rolls are to die for.

     Here are her recipies.

Chicken Parmesan

Directions

Beat eggs and milk in a shallow dish and set aside.

Mix flour, salt, pepper, and garlic powder. Set aside.

Mix breadcrumbs, and Parmesan cheese. Set aside

One at a time, place chicken breast on a sheet of plastic wrap. Place anothe piece of plastic wrap over the chicken.

Beat the chicken until its flat with a meat mallet. (If you don't have a meat mallet use a heavy sauce pan)

Dip the chicken in the egg, and then coat well in the flour mixture.

Dip the chicken in the egg again, and then coat well in the bread crumb mixture. Pour just enough olive oil to coat the bottom of a large fry pan.

Fry the chicken in the oil until brown and crisp on both sides. turning once (about 5 minutes.)

Cover with Marinara sauce and cook on simmer 5 minutes.

Cover with grated Mozzarella cheese

Place lit on pan and simmer until cheese is melted.

Serve with your favorite pasta.
